Escolar is a tropical fish found in temperate seas and oceans around the world.

During the day it usually roams below 600 m and up to 885 m deep, coming up to 100 m, and even less, at night.

The escolar is dark brown, growing darker with age until it is almost black.

A fast swimmer, it has a prominent lateral keel and multiple finlets.
Escolar is eaten in several European and Asian countries and in the United States, often raw in sushi or sashimi.

It is advisable not to eat more than 200 g per day due to its high content of fatty esters (accumulated in its muscles).

It’s often sold under the name butterfish because of its texture and oily flavour.
